Holy Duck Eggs!

I'm officially overrun with duck eggs. I have 51 in the fridge. I've given them away and offered them to the local food bank, neither has been successful. I'm at a loss. I use them in baking and recipes, but honestly, I never thought they'd be so ... undesirable? I think they taste just fine.

I have 4 hens laying, 2 Khaki Campbells, a Pekin and a runner. I'm getting 3-4 a day, depending on if I can find where the runner dropped hers.

My drakes are a Pekin and a Khaki Campbell. Are mutt duck eggs desirable for sale? I hate to just have them go to waste.

I am getting 6 eggs a day at the moment. I dropped one this morning, and didnt worry for a moment as I too have just so many. Its hard to know sometimes just what to do with them all. If they are being sold for eating a mutt egg is no different, but for hatching eggs they can be less desirable.
 
If we can't eat/sell/give away all of our eggs, we feed them back to the birds. Either scramble them or boil then mash them up (shells and all). Extra eggs are wonderful!!! Less money spent on feed and high protein for growing ducklings!

We're 7 days from a Disney trip, so I can't do much right now. I'll definitely set up a couple cheap auctions for them when we get back, plus I plan on incubating a dozen or so when we get back.

I do love my duck eggs for cooking. I hadn't thought about feeding them back to the birds. I cook whole grain rice up for them once a week or so for a treat, adding a few eggs would really be good for them.

I too have a lot of laying ducks, getting up to a dozen or more a day! I do have a few folks who will buy them for eating. I also give them away when I have a lot, just a sample of 3 or 4, for folks to try in a baking recipe. Like a drug dealer, the first hit is free...

I also have some good egg-y recipes that use up a lot of duck eggs at once, spinach quiche which is a great item for potlucks, and french toast. I'm getting ready to make a few loaves of bread into french toast right now, for dinner & for quick breakfasts the rest of the week. I can use up a dozen or more in that, and in each quiche too.

But I wouldn't just throw them into a pond, instead feed them back to your poultry or your other pets, or at least bury them at the drip-line of your trees & bushes for fertilizer.
 
haha I seem to have too many duck eggs and only one duck laying lol ... My dog ends up with lots of scrambled duck eggs lol ... maybe u need a lill dog? lol
 
Mmmm, quiche. I'm the only one who will eat it, tho'. Darn picky eaters I've got here.

I need to find a good recipe for egg bread or something. THEN make french toast out of it. LOL
