My husband and i made an incubater out of a cooler, now we know that our hatch rate wont be the best we are just having fun. My problem is i cant get anything to stableise. My humidity is stuck at 70% no matter what i try and my temp is stuck at 100. I have put holes in it to try and bring everything down, but aside of cutting huge holes in it im at a loss on what to do. What will happen if i put a few eggs in it like it is?

You are on the right track - you need to put a 1/4 inch hole near the bottom somwhere & another near the top. Since heat rises this will cause convection to draw air through the cooler. This turn over of the air will reduce the humidity & lower the temp.

If you set the eggs now - they will develop fully & then drown when they are ready to hatch. Some of the water in the eggs needs to evaporate.
