As they grow a broad breasted will be chubby and heavy looking. A heritage will stay lighter and will fly up a lot.

All turkeys are edible, you have it early enough in the year that a Broad Breasted will be around 30-40lbs by Thanksgiving and a heritage breed will be 15-20lbs. You can look at photos of the full grown birds on murray mcmurrays website to try to see what you have! Meyer Hatchery has a growth chart for the broad breasted, you could weigh them around 5 weeks old to see what they are "on track" to weigh by Thanksgiving. Growth chart is hidden in a tab here: https://www.meyerhatchery.com/productinfo.a5w?prodID=BBWTS
So basically if they aren't close to that chart, you probably have a heritage. Not necessarily, but a good chance.
