I know that you can do the old water test to see how fresh an egg is, but in general, how long do people think our chicken's eggs stay good for (refrigerated)?

Good, as in "fresh": 2 weeks, after that the yolk and white quality drops. I've heard an egg's "best before" date is around 65 days after it was laid. Not washing them (removes the "bloom" that keeps bacteria out), storing them in the fridge and storing them in egg cartons to minimise moisture loss helps keep them fresh longer.

What I also read that was quite interesting is that an egg stored at room temperature ages more in one day than an egg stored in the fridge for a week.
