How long can a chicken go without water/food?

I will be doing a lot of shipping this year and I just want to make sure a customer doesn't receive a dead rooster. Anyone have experience in shipping? Within the United States.

How would you ship a full grown hen?
Day old chicks can survive up to 72 hours
Without feed or water as they soak up all the yolk
Chickens can last for a few days without food or water
But need more water than food
It also depends on temperature
Also what if parcel gets delayed?
