Most people recommend 7 to 10 days, but if you stop to think it can take longer for a hen to build a clutch of eggs. Out of necessity I have held eggs for as long as 21 days with a high % hatch. Storage of eggs at moderate temps and humidity and daily turning are essential. Shipped eggs are a completely different situation.
 
Ideally you should store eggs no longer than 10 days before setting them and I personally prefer to set them before they are a week old, for the best hatch results. Store them pointy end down in egg cartons in a cool area (±70*F) and if possible 75% humidity. Also make sure you tilt the eggs once daily at at least a 90* angle. This helps keep the yolk centred.
