Well, in the old country, they don't refrigerate eggs at all.

For me, I sometimes let my eggs sit on the counter for three days before putting them in the fridge. Hatching eggs can be kept for a week before going bad, and I have heard that they are still edible at that point.

We don't wash or refrigerate our eggs and have kept them for up to 6 weeks with no problems. The only downfall I have seen is that the white of the egg is watery and does not do well for hard boiling. The yolk usually ends up on one end and if you are going to make deviled eggs this is a big problem. They're OK for egg salad or dicing.

I keep my eggs, unwashed, in egg cartons for a few days before putting in the frig. I have noticed "fresh" eggs do not hard boil very well nor scramble, yes the whites are watery compared to store bought eggs.
