What do you mean by "bottom board"?I’m not sure about where to put the 3rd roost or if I even need 36’ of roost for 21 birds. I’m putting the poop board on bottom board. These pictures are from before the roosts were put it. I need better pictures sorry.

Yeah but if they roost in front of the nesting boxes they will also poop in them.Technically I do have 36’ of roosts. 2 on the north side and 1 in front of the nesting boxes
A ridge cap would help a lot. It would keep it dry but let the moisture laden air escape up and out.Even with these vents all along the roof? I already have an issue with rain coming in. I’m apprehensive about adding more ways for rain to blow in.

Gable ends aren't that good for vents unless you have good eves/overhangs. Rain can blow in.
Like others have said, check to see if it's sweating, if you get condensation on the walls or ceiling then it's definitely time to add some more ventilation.
