So far I've gotten 3/12 today which is pretty good since my first egg overall came last Thursday. One was a rubber egg or thin shelled or whatever the best descriptor is. It's the 2nd one of those I've gotten around or under the poop board. Anecdotally it seems like EEs seem to start off their laying with those a lot, just what I remember seeing although I know it's pretty standard for new layers. Today the busted rubbery one did seem to have a blue/green hue to it, but I don't know if that type of egg would really show a true color until it was a properly formed one. I think I'm just really wanting my first colored egg. So the other two are from my Aussie, who's done 4 out of 5 days and 3 in a row and a BR who's on egg number 2. Another BR has been pacing frantically and doing some serious squawking around the nest boxes and any other slightly protected place in the run/coop, so maybe she's looking for a suitable place to get started laying. Ooops, kind of a long post... just thinking out loud I guess.

UPDATED: Yikes now I know why she was pacing and squawking... how about that monster on the right as someone's first egg!

She put it in the run at the bottom of the ramp, but hopefully that was the excitement and she'll learn to use the boxes like my other ladies.

I haven't gotten eggs yet today, but yesterday I got 19. My hens usually start up again just after Christmas, so I expect to be back up to 40-50 eggs in a few months hopefully. I'm looking forward to turkey and duck eggs soon too.

Another gorgeous egg display!!! Eggs are so pretty! I love my duck eggs, I make Creme Brule with Grand Marnier liquor and it is divine!!! I want to try making angel food cake with the whites that are left after making the brule since the brule using only the yolks.
Boiled eggs: add 2 teaspoons of salt to a pot of water (enough water to cover the eggs) bring a large pot of water to a rolling boil. Gently lower eggs in with a ladle. My eggs are still quite small (~45g) so 8-9 minutes does fine, but a larger egg may take up to 15 minutes) to boil hard. Immediately submerge your hard boiled eggs into ice water (although these days I use snow water LOL). Let sit for ~10-15 minutes and start peeling. I take the eggs out of the snow water as I peel not all at once.


I don't remember the exact recipe I used for the brine, but here is: I also don't like the pure vinegar taste store bought pickled eggs have.

14 hard boiled eggs (only 13 made it into the jar.. thanks to myself and the dog)
2 1/2 cups white vinegar
3/4 cup white sugar
1 teaspoon pickling salt
2 cloves of garlic
2 jalapenos (I used 1 green, 1 white)
2 bay leaves

Bring the vinegar, salt and sugar up to temperature so the sugar dissolves, let cool. Add eggs & "dry" ingredients to jar and fill with brine. Let sit for a few days at least! I managed for 2 days and the eggs had a gentle hint of jalapenos... I shook the jar once a day for proper distribution of flavours.

AWESOME!!!!! As my daughter said to me awhile back....."soon you will be drowning in eggs" and she was right!
