How Many Eggs Did You Get Today?

I've never had collard greens but if they are tough I would guess one needs to boil them half to death (and likely lose all the nutrients. Maybe some southern folk can answer that question.

I got 9 eggs today, technically 10 eggs but I can't get a photo of one because I broke it in the nest (she's laying soft shells)

dinner tonight with the girls. First time I’ve done this. Neighbors were supposed to come over for dinner but got delayed so we rescheduled. Hubby is traveling for work until next Friday night. So the girls said they’d keep me company. I need to bring out the TV tray though next time. I have a stump that’s the perfect height but too small to get my plate and the drink glass on at same time.

Whatcha got there on that plate? Hmmm.... reminds me of a chile relleno casserole I made. Looks yummy!

Nothing so fancy I’m afraid. It’s good old meatloaf. BUT it does have a secret ingredient: homemade ketchup which is a family recipe for at least 50 years. I was part of the chain gang making it - and every other thing you could make with tomatoes and home grown garden food - as a child. Do the math - lol!

I just started earlier this year making it myself. I had the foresight to get the family recipe book a few decades ago and copy it all down. Yea for me! The ketchup goes IN the meatloaf as well as a thin layer on top. The ketchup is slightly sweet (adjustable depending on how much brown sugar goes in) and has a kick too based on how many hot peppers are added.

I cheat these days and use store bought plain tomato sauce as the base. I don’t have the garden yet to grow my own. It works well and keeps the cost and time effort reasonable.

Care to share that chili relleno casserole recipe???
