Is it a frittata if you finish it on the range instead of the oven? I cooked all the veggies in the skillet and prepared my eggs ready to pour on top when I realized my oven was nowhere near hot enough! So I put a glass lid on the skillet, turned it down to medium low, and walked away so I wouldn't be tempted to mess with it. It took about twelve minutes to set on top (it was small, about 5 medium eggs). It had onion, celery, chopped fresh baby spinach, cilantro and shredded cheese in it, and I served it with chopped fresh tomato and avocado with Pace salsa on top. It was MIGHTY good!Another 4 egg day!Making a frittata tomorrow!
