Yes--me, too--they are so pretty and so much more healthy than the store bought eggs.

I caught my hubby buying some pickled eggs at the store. AGH! So I told him, gosh, I'll MAKE you pickled eggs. It isn't as if we don't have the eggs.

Haha thats great! I have never had pickled eggs.. are they good?

My goal is to get 150 chickens and make this into a little side business.

Yes, I have over 100 chickens. I wouldn't say that I make a profit but the chickens do pay for their feed. In my neck of the woods, I can only get $1.50 per dozen. If I charge any more than that, then I will have plenty of eggs in the fridge. My monthly income from the chicken eggs is $100 - $165 dollars. I make a bit from my duck eggs as well. I sell those for $3.00 a dozen. The chickens definitely pay for their feed. The only thing is that I have other animals as well and I don't make a profit from them. I wish I could. I want to sell the baby chicks but I can't seem to depart from them. I have anxiety issues when i think about selling the baby chicks. People stop by my house weekly and ask if I want to sell my chickens and other animals but I don't. I have been thinking about it and I know that I can make a profit but I just can't do it.

You know what, there are recipes for doing this, but here is the easy way.

I just had major surgery--shoulder joint complete replacement--and it is proving harder than I had thought to recover from. So I am really looking for easy ways to do things!

Ok--Hard boil your eggs. I really like to use bantie eggs if I have them, as more will fit into the jar.

Peel them, of course.

From the store you get canned pickled beets. Clean a bunch of canning jars.

Heat up the pickled beets, put your eggs in the jars, and pour the pickled beets in and put lids on. You don't really have to seal them.

Put them into the fridge, where they keep for quite a while. I try to use them within two weeks, but I know I have had them for longer than that and they were fine. You do want to leave them for several days to give the juice a chance to permeate the eggs.

You can take the beets out and eat them separately, or leave them with the eggs. I just leave them in.

Actually, although they are pretty and pink, I dislike them very much, but my husband just loves them and considers them a big treat.

I still cannot believe he was BUYING eggs. Pickled or otherwise.

Two dozen on Friday for $3/Dz. I swear when I get in to my office at about 7:45 there is always a couple of people waiting for their eggs. I figure if I had about 481 more Gold Comets plus the 19 I already have I could retire and quit writing computer programs for a living. Naw, then I'd have to expand my coop and run again...
