Ok--Hard boil your eggs. I really like to use bantie eggs if I have them, as more will fit into the jar.
Peel them, of course.
From the store you get canned pickled beets. Clean a bunch of canning jars.
Heat up the pickled beets, put your eggs in the jars, and pour the pickled beets in and put lids on. You don't really have to seal them.
Put them into the fridge, where they keep for quite a while. I try to use them within two weeks, but I know I have had them for longer than that and they were fine. You do want to leave them for several days to give the juice a chance to permeate the eggs.
You can take the beets out and eat them separately, or leave them with the eggs. I just leave them in.
Actually, although they are pretty and pink, I dislike them very much, but my husband just loves them and considers them a big treat.
I still cannot believe he was BUYING eggs. Pickled or otherwise.
