How to calm down a rooster.

If you can't get rid of one, every once in a while you can chase after them aggressively to maintain pecking order. The issue is that you're letting them get to friendly with you. In cockdom there is no friendly. There's dominant and submissive. You must be the dominant one or they're never going to respect your boundaries.
you shouldnt chase them every once and a while this will cause fear and potential aggressiveness. you should chase at them when they try to dominate you. this will show them you are the boss. if you just chase at them this will cause confusion. the only time i chase my roo is when he trys to tell his hens not to go in the coop and to stay out when they are out free ranging. this is him trying to show me hes the boss and this is when i show him whose boss by chasing him in the coop.
 
i dont think ignoring them will help. you need to teach them that pecking you isnt right. spray them with a spray bottle when they peck you then offer treats so they arent skidish.

I work with roosters all the time. Mine are games which means they have capacity for being much more aggressive than your EEs. Fighting with them creates what are called manfighters which is difficult to reverse. My suggestion is not based hypotheticals or something I read, rather many years of experience and practical need for manfriendly birds. i do not have EEs and i dont fight with my roos i simply show them they are the submisive and i am the dominant. just like you said. chasing them for no reason has no purpose keeping them in line does. i have worked with very aggressive roos as well and have expierience as well.

I have a mist setting on my hose and when it is really hot out I will "mist" them so they can cool off, but I don't think they like it, I could try that.

Agreed. That's kinda what I meant but I guess I did a poor job in articulating it.
 
Today I have a bamboo hiking stick and I walked around with it inside the fenced area and the rooster kept fighting with the stick, hes only aggressive when hes with the other chickens, but alone hes a sweetheart. He is a little big aggressive. HELP!
