How to make Homemade Italian Sausage ( Pic Heavy )

We tried to make sauage a couple time. My husbad had gotten me a hand grinder - it as disgsting and left metal shavings in our meat. I gave up then.

This I will try with my new grinder on my kitchen aid.

About using beef!!!, it is really not a good idea, some beef recipes are very different and has to include pre cooking or smoking. It is all about the texture and the fat in the beef does not lend itself to this kind of application. That is why you mainly see beef in a very fine ground dried summer sausage, or beef hot dogs. Pork just retains flavor and juices much much better than others.

As for your other Q's ask away, I gotta tell ya Don, you can also do this manually you don't have to have a fancy machine. Heck before I got this one as a gift from the DW, I used a hand grinder & a funnel.

I don't want to hijack your thread - what stuffer are you using? Is therea generic and that will fit my kitchenaid? inding the kitchenaid sausage stuffer attachment isn't easy. None of the stores carrying the mixer sell all of the attachments.

I am doing this as soon as I find a stuffer.
 
Miss P I think you can go on line to kitchenaid.com and find the attachments. I found what I was needing awhile back but didn't look to see if they had the one you are wanting.
Raising your own hogs for this is just over the top I'll bet. In Springfield they have two wonderful stores that have many butchers behind the counter and you can order anything and they go cut what you actually want. They will even season it for you. A wonderful concept....a real butcher shop...is almost a thing of the past. Now that is something that would be appreciated now a days.

This Deni was very reasonable at around $129.00 on sale w/ free shipping, but then again I grind alot of meat and make maybe 150-200 lbs of sausage a yr, so this is well worth it for me. I bet the kitchen aid attachments are at least that cost or more, so this will work well for you. just think of all you can do with this one, it does come with all attachments and 3 grinding plates.

Well, I won't make tons of sausage so spent the $10 for the sausge stuffer to g with my KA grinder. Ifit doesn't perform I'll buy the one you recommended

If the stuffer comes today I am going to costco tonight for boston butt roasts!

Has anybody tried making these or have plans to, I would love to see your results. This thread could even serve as a Q & A tutorial, I am interested to know how you did.

I used Gump bread to make the rolls for these, and they came out super.
