How to prepare hard boiled eggs

What method do you all use to boil fresh chicken eggs? Mine are very hard to peel (boiled for 1 minute, left to sit with lid on for 10 min then into ice bath).
 
We use a device to do ours. We've had something like this for about a decade and wouldn't do it any other way as they are always perfectly easy to peel no matter the age. Ours are silkie eggs which have a very thick shell and membrane and are hard to break decently in the first place, but with hard boiled eggs in this thing, it's a breeze!

This is similar to ours. They make larger ones too. You can't mess up as it auto shuts off.

Older eggs are easier to peel. I keep mine out on the counter and grab the eggs that have been sitting for at least a week. I also do not add the eggs then bring the water to a boil. I bring the water to a boil first then add the eggs.

Don't boil them. Steam them. 7 mins for soft boiled, 17 mins for hard boiled. Shells come off easily, and the texture of the egg is much better. Not rubbery. For soft boiled, I take them out at 7 mins pretty much exactly and put them in an ice bath to stop the cooking, but hard boiled don't need any extra care.
