How to use the whole animal (waste not want not)

Bananas

Most bananas (Cavendish) you see in the supermarket are a bit like franken-chickens. They are bred to be able to be harvested very green and last a long time. Down side is they lack so much flavor.

We have about 12 types of bananas on our little farm from more than 30 cultivars grown.

Our cavendish are ripe when they are still green. We have tiny Amas bananas that are full of flavor. Bananas that we boil and bananas that get fried and coated with caremelized sugar, then put on a stick - banan-que
