How to use the whole animal (waste not want not)

How to debone a chicken!
Butterflying a chicken is pretty cool too, really cuts down the cooking time. Just slice up either side of the spine ( cutting the ribs ) or if you have poultry shears snip up either side of the spine remove the spine lay the chicken out flat in a pan... awesome

Taking the back bone out is also called spatchcocking... save the backbone for soup. I did that to some game hens for a dinner once... They cooked on top of dressing.... everyone liked em.

I was thinking of doing a turkey once but then I thought just boning would be a better choice then it would cook evener. They still are being offered in the store for 99 cents a pound.... If I had a freezer to put one or two in I would.

I'm hoping to de bone a few just for the variety. And duck too.

and a wonderful way to make bone broth.... Another thing on my list of stuff I want to do... I hear if you do it right you extract ALL the goodness from the bones... What is left turns to powder easily and can be added into the garden directly or used for calcium for the chickens.
