Humidity and how much? For day 14 quail eggs!

Also, I place a sterile sponge in the incubator and add water to it through the vent hole if I need to bring up the humidity during lockdown. I have the same incubator as you and if there is a bit of condensation on the viewing windows things are just right. I also put a piece of tape across the hole for the turner cord during lockdown.
 
Paper towels are going to soak up moisture from below and from above. If it's available to you, I would change out the paper towels with rubber shelf liner (the kind with holes). I also use that in the brooder for the first couple of days to prevent them from splaying.

Wet paper towels might not be terrible for the eggs, but they won't be good for newly hatched chicks to dry off on.

By "all in great condition to hatch," do you mean that you candled all of them and removed any clears?
Yes I removed anything without a heartbeat... so yeah all of them showed signs of an embryo, all moving inside great weight and most of all easily visible to see trough the candling, I could almost see all expect for one wich was hard to see, but I saw movement, I guess I got lucky with visible eggs, I hear they are hard to spot in quail eggs.... I had 15, I removed 2 in day 13 one being infertile and the other dead from shipping due to cracks... the rest are great I can assure, I’m just hoping to get the incubation done so I can get them to be born...^~^

I have humidity 78% will adding the sponge greatly improve the humidity? And won’t to much humidity make them prone to asthma or breathing problems? And won’t they suffocate?(I’m new to this thing)

Also I blocked the whole where th cord goes trough but I don’t use a Turner? Should I still block it? Or leave it be?(I have it blocked right now) and when will I be able to remove one of the plugs? When there’s too much condensation? Or is it specifically in a day?
