While gumbo can be (and is) eaten year round. It is normally reserved for fall & winter. Mudbugs are a celebration of spring (Easter fasting observance) and eaten previously, as the rice was being planted. MIL tells when she was young that they would put sieves over the weirs as they were flooding the fields to catch the crawfish in the spring. Big pot of seasonings boiling. One of the men would pull the sieve and add the crawfish to the pot to cook and dump them in a pile to cool. As people would get hungry, they'd go eat some crawfish and rest. Mom said it was a lot of work planting the rice fields and lasted days. Whole extended families would be out.Sooooo TrueHmmmm Mudbugs, gumbo and woodford reserve, what an amazing thought.
