I need to do that again, haven't for many years and really wonder how a heritage bird would come out fried.

My mom makes her own injection stuff....I love the word stuff....
It makes a world of difference if you inject the bird in the correct places with the correct amount of stuff...so she claims.

Thanksgiving at my house has been turkey or chicken... cranberries... I've also done up glumpki, Stuffing of course, tatters... Pumpkin pie from scratch.

Yep, just a month earlier than you. Probably raw Caribou, and yes, seal blubber is served with it.
