OK Chefs...I need some quick help.

I have never made a stuffed chicken before.
My question is can i add a little rice inside the chicken or should I just make a dirty rice on the side?
I'm worried there won't be enough room 'inside' and I'm worried the meats won't cook inside...tell me they will.
I need to go buy the chicken right now so I'm thinking I will buy the biggest one I can find.

Kiki, I have not made this recipe, but I know the lady behind it and trust her. So I'd follow it as is and make dirty rice on the side. Do you have an instant read thermometer? I'd put it in the center of the stuffing and as long as it reaches 155* you're golden. I generally bring my birds out of the oven at 155 and let them rest a half hour. I don't like over cooked bird, even though that's what the food police swear by.

Yes, she's still in the bathroom, but doing well. I'll go in and sit with her and she comes and gets in my lap for some petting. This wouldn't have happened outside, so I'm happy about that. DH doesn't like cats in the house because you can't keep them off your pillows, etc. and they leave hair everywhere, so she'll go back out this Saturday if I feel like she's spry enough to run away from things if needed. Her kittens are confused because she's not out there with them, but they hang out with each other and the chickens, so it's not too bad.

We'll do the Pet Smart adoption program with the other three - except I think my stepdaughter will take one of them. Her cat died from a snakebite recently, and she's wanting another pet. The other two can go through Pet Smart, and if they don't get adopted, they can just live with mom in the barn. They'll be neutered/spayed and vaccinated, so that's all good.
 
No, they smell too bad and the cooking process involves boiling the thing for hours before you can start to "cook" it to make a meal! :sick
They are nasty. Our Golden Retriever (passed now) used to catch them out of the grape arbor in the backyard and bring them in the HOUSE!! DH would get a shovel and dispose of them. Most of the time, they were really dead, rather than faking it. Sharp teeth!
 
I am not a fan of using antibiotics that the doctors seem to so quickly hand out.
The Mini has never had to take the nasty pink medicine.
Unfortunately the others have.
There's some serious information out there about Cipro and any of the "Quin's" type antibiotics - can cause tendonitis and rupture. Happens because it changes the mitochondrial DNA in the cells and cannot be cured or reversed. DON'T take these antibiotics unless there is not another alternative. They are prescribed on a regular basis for conditions like UTI's etc.
