I have to make corn bread for 50 people...

SarahFair - Cammy's recipe has the sugar included in the recipe (1/4 C) but since the recipe I sent is similar to hers, you could probably add the same amount to my recipe and it would probably work - I have never tried it though. As for the honey, I have never added it to the recipe, only slathered it over the bread when I was eating it. VERY LIBERALLY slathered it over the bread...yummmmmm!

Mine doesn't call for eggs, yet it is really pretty moist. It is a bit dense - definitely not a "light and airy" type of bread. Maybe it is the buttermilk, since that is thicker than regular milk....honey brushed on the top sounds delish! Another thought to make you hungry - picture a big steaming bowl of chili with a thick slice of cornbread sitting right in the middle of it. Maybe add some shredded cheese, some hot peppers..........

My cornbread is really fluffy and airy, not heavy. I've always put eggs in mine. Learned how to make this cornbread from my granny.

On that tablespoon of clabber girl, I always make it heaping. The higher I can get mine to rise, the better I like it......

I think the buttermilk recipe sounds really good too, I might have to try that.

Do you mean crumbly and dry? I would say too much cornmeal vs the other ingredients would make it crumbly and dry.

I'm going to try yours also since I have never added eggs! Yours sounds good also! My recipe actually came from my husband's ex wife via her grandmother. OK - cornbread, brunswick stew and chili it is then!! Let's eat!!
 
I cheat like crazy and make sweet cornbread. I mix two of the boxes of Jiffy cornbread mix in a mixing bowl according to directions. In another bowl I mix up a super moist yellow cake mix. I then blend them together and average the times, or check with a straw if it is done. It is really lots of cornbread for almost zero effort and only a little bit of money.

Corn bread is about 2 inches thick, made with buttermilk, crunchy on the outside, warm and soft in the middle, and cooked in a cast iron skillet.

That stuff that's about an inch thick, a little brown on top and a little brown on bottom, and tastes sweet....We call that CAKE!
