I have to make corn bread for 50 people...

I like savory cornbread, not sweet. I cook about 6 strips of bacon in the cast iron skillet, and pour off most of the oil. I chop up the bacon, add some canned or fresh green chiles, cilantro, and cheese and add all of this to my usual corn bread recipe. Instead of oil, I use the cheese and bacon grease as the fat. It isn't good for you, but oh man it tastes good, especially with chili. This can easily be done when camping too.

We love cornbread here, eat it every day with everything....even crumble it in milk MMmmmm

I'll make and donate 1/2 gallon of homemade buttermilk.....You need real buttermilk for really good tasting cornbread.

Now I need to know if you like "wet" or dry cornbread and if you want to use mix or real corn meal....

We grow our own corn and have it ground in ranburn ala so I recommend using ground corn meal.

So I prefer stone ground mill.

hummm....wish I lived in Georgia so I could get the homemade buttermilk!! I don't have cows for fresh dairy products. How do you make homemade buttermilk? I have a yogotherm and a buttermilk culture from New England Cheese Making Company. I make yogurt with it but have never tried the buttermilk. Sounds delish!!!
 
Wet cornbread is just moist vs dry....

By the way, I never measure cornbread,,,,but look at it....

For 25,,,,,try about 5 cups self rising flour, 5 cups plain cornmeal, 3 cups butter milk and 5 eggs and 1 cup oil, stir, mix, leave in lumps.

put in about 5 round preheated and oiled round skillets in a preheated 350 degree oven....

If that "casual approach" scares you, lol, just test one of them in a muffin pan, if it's too dry, add more butter milk, too wet, add more srf/cornmeal mix.
