Anybody got any ideas for a yummy egg meal? Possibly a sandwich or somthing for lunch. Thanks for the egg delights!

Just popped these into the oven. I'm curious to see how they'll turn out. They smelled alot like corn bread!Popovers
6 eggs
2 cups milk
2 cups flour
1 tsp salt
2 Tbsp. oil
Whip with mixer and put in greased muffin tins (2).
Makes 24 popovers.
Oven at 450 for about 6-8 minutes or slightly more (until tops are starting to turn golden).
Then decrease oven to 350 until golden brown, approx. another 6-8 minutes.
From Better Homes and Gardens Quick Breads...I add more eggs though (as seen above).
Serve with butter drizzled over them and jam.

I theorize that beating the batter vigorously with the mixer makes better popovers.
