I need an egg delight. Any ideas?

On my bed reading...
Anybody got any ideas for a yummy egg meal? Possibly a sandwich or somthing for lunch. Thanks for the egg delights!

Popovers

6 eggs
2 cups milk
2 cups flour
1 tsp salt
2 Tbsp. oil

Whip with mixer and put in greased muffin tins (2).

Makes 24 popovers.

Oven at 450 for about 6-8 minutes or slightly more (until tops are starting to turn golden).
Then decrease oven to 350 until golden brown, approx. another 6-8 minutes.

From Better Homes and Gardens Quick Breads...I add more eggs though (as seen above).

Serve with butter drizzled over them and jam.

Fried egg sandwiches are one of my favorite lunches. When I'm feeling simple (or lazy), I just use a couple eggs fried over hard on bread with mayo and dijon mustard, but it's really easy to dress up with some thin sliced ham or bacon, cheese (I love pepperjack cheese and peppered bacon!), lettuce, tomato, and a slice of walla walla sweet onion...yum! I usually just put it on rye or wheat bread, but it's also really good on a croissant or a bagel.

Just popped these into the oven. I'm curious to see how they'll turn out. They smelled alot like corn bread!

I theorize that beating the batter vigorously with the mixer makes better popovers.

This is one of my family's favorite recipes and I get many requests for them.
 
a hint for popovers- heat up the muffin tin in the oven before adding the batter, then straight back into the oven. I saw this on "Diners, Drive-Ins and Dives", but my mom always stressed that when she made them.

If you look at the recipe, the only thing that makes pop-overs rise is the air that you beat into the eggs. The foamier the eggs, the lighter the pop-over.
