Illinois...

Hello, everybody. It's been chaotic around here... and rainy. The darn rain just doesn't let up long enough to really get anything done outside. My potatoes in the garden appreciate it though - they need 1.5 inches of water per week.
We'r have had way too many eggs lately. We only have 7 hens (and 1 still growing chick), but we'r are not able to eat 5-7 eggs per day. We have been giving them away to a neighbor and my parents every now and then, and that is still not enough. So now I have been creative with meals. I made shakshuka last week and egg foo young today. Both of these dishes used 6 eggs each... it still doesn't put a large dent into the 30-40 eggs per week.

I normally throw a few extra eggs into every stir fry. Egg drop soup is also very easy.

My son's fav dinner is potato leek soup. However for our family, it must have an over-easy egg (or 2) on top + a sprinkle of shredded cheddar + fresh chives. I make home-made herb bread to go with it.

DH's fav meal is an egg sandwich. I bake some brioche buns & caramelize some onions ahead of time. Soft scramble some eggs with fresh chives, put it in the bun and top with some sharp cheddar. Then add the onions and a little spicy mayo mixture (mayo + chipotle sauce) OK, so it may sound a bit odd, but the combo of flavors really work together.

No recipe link but here you go:
Egg Foo Young
- 6 large eggs, scrambled
- 1/2 onion or 1 small onion, diced
- 2-3 green onions, sliced thin (bulb and all)
- 1 sweet pepper, diced (I have "ancient sweet peppers" but a bell pepper would work too)
- 1 carrot, shaved or julianned
- Handful of mushrooms, diced (I used oyster mushrooms, but any well do. Even a can of mushrooms would suffice)
- Chopped meat of your choice, 1-1.5 cup, optional (chicken, BBQ pork, and shrimp are all very common at Chinese restaurants. I used left over pork shoulder we smoked on Monday.)

Sautee all the vegetables and meat. Set aside in a bowl to cool a bit (in refrigerator if necessary).
Beat eggs and fold into the cooled sauteed vegetables and meat. They need to be cool enough to not cook the eggs. The resukting mixture should be heavy with vegetables/meat, more so than a typical omelette.
Ladel the mixture onto a hot skillet over medium heat. The goal is to make pancake-sized (not jumbo pancake) omelettes.

Egg Foo Young Gravy
2 cups of stock (homemade chicken or turkey stock are my go-to)
2 Tbsp corn starch
1/2 cup soy sauce (it's the only salt you need to add to the entire meal so just use the real stuff)

Combine ingredients and slowly bring to a boil over a medium heat. Once boiling torn off heat and remove from burner to let cool. It should thicken a bit. It will still be rather thin for "gravy". It's not country gravy though. It should just be tick enough to stick to the egg foo young.

To serve, the are two methods.
First method:
Pour the gravy right over the egg foo young in a dish or pan and set out on the table. Use a spatula to plate.
Second method:
Plate the egg foo young dry and pour/ladle gravy on top.
 
@Louise Waffles She seems alright today. She is up walking, eating and drinking. Had a grand time playing in the pool and running around the yard. There I go breaking rules again letting them be free. The neighbors 4 year old loves watching them... So does their lab

I am really hoping its some kind of vitamin deficiency thing. She likes the new electrolyte water (rooster booster?) so hopefully she can keep being awesome. I am glad I didnt actually see the event because it would have traumatized me. I saw one of the chicks we had die on us siezing and she did it in her final moment and I wont soon be forgetting that, and she had only been here 2 days. Bagel is 5 weeks old.

Is Bagel ok now? I have a 2 1/2 week old Cayuga duckling that seems to be having seizures. I have made sure they have the proper food so that they can get enough Niacin. I talked to the feed guy and he said I didn't need Brewers yeast if I had duck feed. She didn't have one Monday but not sure about yesterday. Today she had 1 that only last a minute or so. Any help would be awesome!!!

The person you are asking, has been MIA from here since August 2017. I am sorry I cant help you since I do not have ducks.
