I make them several ways, but my FAVORITE will always be these easy, easy, easy drop biscuits. All you need is one part vegetable oil, two parts buttermilk, and 4 parts self-rising flour, to make any size recipe you like.
For 4 people, I usually just use
2 cups SELF-RISING flour
1 cup buttermilk
1/2 cup vegetable oil
Mix until you have a sticky dough that cleans the side of the bowl (not like bread dough would, but sort of).
Drop in whatever size you want onto ungreased cookie sheet, and bake 'til peaks (and bottoms) are golden. YUM.
You can add shredded cheese, garlic, herbs, etc. to the mix prior to baking, and make them REALLY special.
This is the same recipe my family has used for generations in our chicken & dumplings. Just get your "stew" going at a light boil, then drop the biscuit dough into the pot. DO NOT STIR, or they'll fall apart before they get cooked.
When you think they're about done, lift one out for testing. When you break it apart, it should look just like a baked biscuit on the inside.
