In search of the perfect biscuit recipe!

I fry up about a pound of sausage (I sometimes add extra red pepper or fennel seeds) breaking it up well once its browned well, put in a spoonful or two(1/3 c or so?) of flour stir around soak up the grease well pour in 2 or 3 cup of milk and stir on med heat till it starts to thicken, s&p to taste.

If its too thick add some extra milk if too thin mix flour with cool water and add to gravy and cook till it thickens.

This is the way my Kansas grandma and my aunts always have made gravy and I do it by eye so maybe theres a recipe with measurements out there, good luck, Sue
 
I make them several ways, but my FAVORITE will always be these easy, easy, easy drop biscuits. All you need is one part vegetable oil, two parts buttermilk, and 4 parts self-rising flour, to make any size recipe you like.

For 4 people, I usually just use

2 cups SELF-RISING flour

1 cup buttermilk

1/2 cup vegetable oil

Mix until you have a sticky dough that cleans the side of the bowl (not like bread dough would, but sort of).

Drop in whatever size you want onto ungreased cookie sheet, and bake 'til peaks (and bottoms) are golden. YUM.

You can add shredded cheese, garlic, herbs, etc. to the mix prior to baking, and make them REALLY special.

This is the same recipe my family has used for generations in our chicken & dumplings. Just get your "stew" going at a light boil, then drop the biscuit dough into the pot. DO NOT STIR, or they'll fall apart before they get cooked.

When you think they're about done, lift one out for testing. When you break it apart, it should look just like a baked biscuit on the inside.

Good Lord, ninjapoodles, that food looks good. I am from Mississippi and you just CAN'T beat a good ole southern meal. YUM! If it wasn't so dang hot, I might be tempted to go cook something! HA
 
I KNOW, right? Traditional Southern fare is definitely my favorite stuff to eat AND to cook, but we don't do it very often, just because it's not so healthy. Well, I make dumplings occasionally, because it is my #1 comfort food in the world, but fried chicken, potatoes and gravy? Maybe once a year.

All those bisquit recipes look good. I never could make good bisquits so will give some of this a try.

Yogi has a good recipe for bisquits too. I am not sure but I think he has it posted somewhere. Maybe under "Grandpa whats for supper" thread.

I'll try to let you know the next time dumplin's are on the menu! Tonight is lasagna, unless I get too hot mowing the yard beforehand, in which case I might be offering everyone a nice bowl of Cheerios.
