I'm not sure if "dry" hatching is any easier. I would think it would be more work as you're trying to control the ambient humidity in the location that the bator is vs controlling it in the bator itself. I've never tried it. You can use smaller containers to hold water in your bator instead of using the provided channels. I don't put water in the channels until lockdown. Until then I just use a small container and add water as needed based on what my humidity has been at and what my air cells look like.I've really just been playing it by earAdding x-amount of water into the bator every 2 days as instructed.
