I tried that for YEARS - it was always either underdone/uncooked in the center or over cooked. I never got the hang of it. I was convinced that I could just never bake bread. Then I started using a thermometer - now I bake all my own bread. :thumbsup

(I think you are way more talented than I am, Benny!!!!)

:ya

Seriously?!  I thought you were yanking our chain! :lau
x100000000000.......

I'm up (have been up a while), trying to clear my head of a nasty headache I woke up with this morning. Waiting for pain meds to kick in - and I have to be sitting upright (if I stay in bed, pressure in my head just makes it worse). Can't stomach eggs - yogurt is working ok so far.

Looks to be a busy week for me - If I don't keep up, thanks again everyone for listening to me/hugging me over my difficult cull day yesterday (I can't imagine having to do that "alone"). Sally, try the bread again (either my version/instructions or Ron's) - use the thermometer and let it cool - those are two things that help avoid the outcome you were having. MC, please stop drinking gross stuff in the AM. :sick

I'll see you guys on the flip side. :frow

I agree thumping bread never worked for me either.
Now if they just made a thermometer for watermelon

:frow
:hugs for feeling better

so what do I get?
Bread flour or AP white flour. The trick is the amount of flour to use. Flour is different in amount to use based on the amount of water it has in it --in the bag! Humidity at your place will change it. As an example, A recipe that calls for 8 cups of flour here may need 9 to make good dough. At a humid place, it might take 7. Because of this you cannot go by the number of cups in a recipe for any type of bread. Sourdough is trickier because it will always be sticky. It is easy to put either too much or too little flour in the dough. Trick! Bread is cooked when it reaches an internal temperature of 195 to 205---yes, I use a thermometer to cook bread.
It also BAKED when its bottom is brown and make a hollow sound when topped on!

:lau Seriously? This thread has been talking about sourdough for how many pages? It is sourdough starter. Fermented flour.
 Oh sorry for asking. Sourdough is some good bread though.

I think about it, then dismiss it. I do use it in my iced coffee though. Since milk has been my only friend, I was hoping the creamer would keep the coffee down. Adding cream and sugar to chicken broth (especially cold) would have been very very bad. :sick Huh? What do you have to do with this?
EWWWWW! :lau
