Vent sexing can be done the first couple days. I think only the first three. After that, I always go with how fast the wing feathers grow. Girls feather out faster. It is not for all breeds, but it works for me! You can also go by how fast they grow, and the thickness of their legs.

Do you know if it works for orpingtons?

We dont have a tradition of hunting, and we dont have habitats and the the versatility of wildlife life you have, but still I can imagine the trill of the hunt!

It's a shame there have been so many extinctions and extirpations from habitat.

We usually have at least 4 or 5 types of mustard in the fridge.
You are familiar with yellow mustard.
Dijon - like Grey Poupon is good.
I like whole grain, German and horseradish mustard.

how do you sex a chicken and how old do they need to be?

Depends on the breed. Some Mediterranean breeds can be sexed by comb size by 3 or 4 weeks. Some breeds like Cochins can't (or at least I can't) be sexed till closer to 20 weeks.
Large combed breed cockerels will have much larger combs than pullets.
Cockerels start getting pointy hackle, wing and tail feathers. Eventually the tail feathers will be more curved and develop sickle feathers.
Cocks will crow and try to mate pullets.
