13 eggs so far today.... I'm drowning in eggs, and I have more POL pullets.... What a wonderful problem!! :weee
 
On processing: I know it's good to keep the skin because it keeps everything moist while cooking. But if I'm just going to boil them down for stock and jambalaya, then skinning would be fine right?


Skinning is all I do. However if you want stock I would think keeping the skin would be the way to go.


For the fat? What do you use yours with?

There's some truth to that. Labor has long striven for more fairness in wages and working conditions.
Labor movements here date back to the mid 1800s. Throughout that time the public has occasionally been suspicious of labor. That's known as "The Red Scare". Granted, some of the labor radicals took it too far.
In the '40s, the CIO expelled a group of unions with a million members because of their association with communism.
Then there was the influence of the mob and corruption in the Teamsters in the '50s and '60s.
I think we made the greatest advances during Roosevelt's time in office. That's when the first woman in our history held a cabinet post as Secretary of Labor. She had a pro labor agenda which included minimum wage laws, abolition of child labor, old age pensions and unemployment insurance.
A couple years later, the National Labor Relations Act passed. It has since been curtailed by other legislation taking the teeth out of it.
The status of middle class income is directly a product of labor unions.
This is an interesting timeline of the history of labor in the US dating back to the 1600s.

Just because it's labor day, doesn't mean everyone is off work.
My wife left for work an hour ago. My son and daughter are both working double shifts today.
He took the last 3 days off to move so he has to make up for it by working doubles the next 3 days.
He'll be cooking from 9 to near midnight each day.

It's been pretty good, except for my sick kitty. He's urinating nearly pure blood. Ugh.

Just put some banana bread in the oven for my daughter so she's happy and the house smells great!
I bet it does smell great.

I guess I'm back to skinning some and plucking some, to see which works better for us.
