Brining 101 Osmosis:


Meat already contains salt water. By immersing meats into a liquid with a higher concentration of salt the liquid is absorbed into the meat. Any flavoring added to the brine will be carried into the meat with the saltwater mixture. And because the meat is now loaded with extra moisture it will stay that way longer while it cooks.

Here's a pic I pulled off the interned of an adult. Nala doesn't have her adult feathers in yet. I'm hoping I see more of the partridge pattern when they grow in. She came out of Florida and the ones that are in the incubator now are from southern Idaho.

I see her moms color keeps running down into her back see where it stops on mine above?
