Actually, my father and grandfather were tenant farmers in the early 1900's. Rather poor, financially. They butchered during the winter months to make ends meet. For did, they would take the parts that were less desired. I they lived eating organ meats and such. They were their comfort foods, so later in life would buy them for pennies from the butcher, they were considered waste by many. They then became my comfort foods, we weren't wealthy.
I eat tongue, heart, pig pancreas (sweet breads), oxtail soup, marrow bones, etc. I never developed a taste for liver, though. I've also had pig brain, ears, almost any part that can be made palatable. Used to fight over the trail at pig roasts (as it turned on the spot we'd pull it off when it was done).
Just a stupid country hick, I guess. I wouldn't have it any other way.
We make the most tasteful dishes from this Parts! We don't waste nothing!
And they are so good! The ox tail soup with root vegetables is wonderful!
I will upload some pic of this! Did you try the cheek and had meat of ox?
