So you should set Wednesday at the earliest, right.

Eggs come in Monday, other thermometer comes in Monday.
Fan should be done let's say by Sunday at the latest
As soon as your fan is done fire that bator up! Let it sit and add your thermometers as you get them and let your eggs rest to settle air cells.

By the time that's all said and done you can set on Wednesday given y I ur temperature is holding steady right?

I would make it a priority to get that fan up and running today. Give your incubator as much time as possible running empty to make sure you are good to go.
