Just hatched 6 of 6 Pekin/KC eggs. I put these in paper towel ring holders at lock down and I really think it made a difference. I have some Muscovy eggs arriving this week

  • ½ teaspoon baking powder

  • 2 cups confectioners sugar
  • 1 cup peanut butter
  • 1 teaspoon vanilla
Instructions: Preheat oven to 350 degrees. Combine first five ingredients and set aside. Beat together butter and sugar. Add eggs one at a time, blending well as after each addition. Add buttermilk and vanilla. Mix well. Add dry ingredients, blending until just combined. Grease cookie sheets. Scoop 1 ounce of batter and drop onto pans. Bake 12 minutes, then allow 5 minutes for cooling before removing from pans. For filling, beat butter until smooth. Blend in sugar until well incorporated. Add vanilla and beat until light and fluffy. Assemble whoopie pies by placing heaping spoonful of filling on one side and sandwiching other side onto it.
