For the fat? What do you use yours with?


I seal meal mine then freeze. Put bag in pan of water slow cook till done. Make tacos enchiladas eat plain omelette etc.

Yes for the fat and flavor for the broth. Although by cooking in seal meal bags the broth is still great since it cooks in its own juices. No water mixes into bag.
 
On processing: I know it's good to keep the skin because it keeps everything moist while cooking. But if I'm just going to boil them down for stock and jambalaya, then skinning would be fine right?
