They got back to me, finally, & offered to send me a new lid, or new control panel. I agreed with the lid since I don't think I can rewire everything.

I've faced ALL sort of incubator troubles with power outages, temp spikes, and the like.. Never had a cross beak one.I've read about many EE's hatching with crossbeak, so it could be the breed or it could be the incubator issues.
Well, I use water bottles filled with sand first then water as heat sinks/stabilizers for power outages.. Small rocks in the eggs turner even or whatever.What happens if you put a small bottle of water in there to absorb the heat? If it will fit.
It may be doing that because you're running it empty.
Do you still have the item number?I need to contact them about mine. From my experience, mine would seem to stabilize and then out of nowhere start spiking. I agree about giving it time to stabilize. I always gave it 24 hours between any fiddling. I feel like I'd love the machine if I was able to trust it. Now I wonder if both of us had a unit from the same batch that was just faulty.

I'm so happy to read this, not that you had any crossbeaks of course. I wasn't 100% confident with saying it was one or the other. I've read about EE's coming from some Hatchery and there were quite a few folks that purchased from the same place and many of them had chicks with crossbeaks. One of the threads was full of information and it was stated that it was likely the parent stock passing it on rather than any other factors. After reading that thread and many others referencing crossbeaks, I decided to include both possibilities anytime I mentioned my EE's issues just in case. Those eggs were given to me for free. I still have my one surviving crossbeak (it's like a severe underbite ~underbeak~ with a cross that's barely noticeable at all) cockerel and won't be breeding him or any of the other EE's/EE X's.I've faced ALL sort of incubator troubles with power outages, temp spikes, and the like.. UNTIL I started working with a line of bantam wheaten Ameraucana.
And never since have I seen it again YET.
I'll go ahead and say, yes I think cross beak is HEAVILY genetics related EVEN if hidden in the parent stock.
None of my EE cross offspring showed cross beak. None of my lav Am's had it. So I will say LINE specific genetics. If it were MY stock.. I would do test mating and hatches to eliminate THAT contributor

My first thought was what does an empty or full bator have to do with LOWERING the temperature.. And no, I don't think that would happen.
But with further thought.. YES, it COULD help stabilize the temperature.. or in other words reduce the overall impact of the fluctuations.. by taking a LONGER amount of time to heat up or cool off comparatively to empty. So I think it could help!
Noting.. Styrofoam is a MUCH better insulator than plastic.. I'm SO glad I went (back to) the Genesis 1588 AGAIN! With so many positive reviews on the incuview it was a tough choice. Alas, the Genesis is a work horse.. the last one ran ALL year not stop using the 1602N (also a work horse) as a "hatcher". I thought I had my share of hatching and sold them. But chick fever tends to relapse often.
External water well access WAS the selling point for me when I bought the 360, thinking half capacity (21) SHOULD be ENOUGH. I did NOT like the NR360 (chicks and eggs fall out too easily) and sold it.. but I did several hatches as simple as set it and forget it with hatch taking place on day 21! No questions asked.
I think this is definitely a faulty unit. Unfortunately, even thought the company is likely to stand behind their product and refund or replace the unit.. I've not had issues with incubator warehouse, but it won't change anything about our personal timing or mishaps. Many companies don't send replacements until receiving the old units.
I would definitely get the oldER unit ready to go.. and in fact consider keeping it cleaned up and stored as a back up.. or hatcher to run rolling hatches EVERY week, lol.. kidding on the last part..
But.. after this.. might you consider the 1588 as your replacement.. noting of COURSE those could come with faulty units as much as any other.

ETA: Right on to the new lid! Is it coming from the manufacturer or incubator warehouse, or is that one and the same?
