INDIANA BYC'ers HERE!

Oooo wink wink! Gotcha'!

I'll do my best...I'll need to write it down as I make them first then send it to you! LOL yes, I'm one of those! My DH hates when he cooks and asks me how much I put in of what and my response is...IDK...just add it and taste it! LOL Learned it from my last 3 generations of mothers! They always have to cook it with me first ... then it's "Ahhh, I got it!" It's much harder though when I call them and ask over the phone...hahahaha Learning from the best cooks in the world though IMO!
This is to Peaceful walls also, I think the attachment is necessary and my mixer needs one for Christmas too. We have a countertop pasta roller and its a bit wiggly. I'm sure that means it needs replaced, lol. If you do get around to making a recipe, I'd love it as well. We use one from Lidia Bastianich, but it uses some olive oil instead of just eggs. My kids love making the pasta with me. If you do make the sheets, you can also use egg with ricotta/cottage cheese/parm and some fresh herbs for the filling too. YUM. I might need some tonight.

Been working on getting our aquaponics system started and haven't really had time to look through all the recent posts. Am trying to catch up today!!! Sad to see some of the animal issues that have come up recently- calves, chickens, etc. Just a reminder that there are those who will do anything for a quick buck...sadly.
I've been mucking about with aquaponics for a couple years now. Had some bad luck with my Tilapia, and need to start over. I may wait until spring to start up again though. I see a lot of potential here for supplementing food for both us and our chickens.

I just sent my first ever shipment of Silkie eggs.

for Jchny2000 that they get there in one piece! I've never used so much bubble wrap in my life, so I think they should be okay.

I would like the recipe too. Not that I have eggs right now but I know they are going to come and noodles sound wonderful.
Peaceful, Sally & CR: **Of course the rest of the BYC is welcome to try**

I am thinking of doing a video for you when I make them!! Lol...it's hard to describe the How To's. As for a pasta contraption, I've never used one so I'm not sure how that would work.

**Make sure your eggs are brought to room temperature before using them or the dough will continuously spring back on you when attempting to roll it out.**
Obviously you can make with how ever much or little eggs you choose depending on the batch but this is what I do and only use what I need at a time.

Prep work:
Bring 10 eggs to room temp
Large bowl
Parchment or Freezer paper laid out (I double up making it about half the length of my dining room table)
Gold Medal flour
salt

In a large bowl
10 eggs; Use 4 whole (yolk & white) & the other 6 yolk only; beat lightly
1/2 tsp salt
add 1/2 of an egg shell filled with water
then just start adding flour slowly a bit at a time and lightly beat it with a fork *This step seems like it takes forever to get all of the flour in there and to the consistency you need*
You'll want it to still be a Bit sticky in the end

I usually separate out a fist full of dough or so at a time and knead it lightly but not too much as to not make it tough
flour a large area of your parch paper *not to much in any one spot and no large clumps*
sift the flour lightly over your dough; flour your rolling pin and roll it out evenly about 1/4 in thick or a little less *you don't want them too thick or too thin*
Making sure it's not sticking to your paper on the underside

Then I run my noodle cutter over it then depending on how long I want them I take a butter or pearing knife and run cross way to make the Length of noodle I want
Leave it all on the parch paper and Place that on a cafe tray or large cookie sheet; whatever you have to stack them on and do each set like that ensuring a parch paper in between each set.
Then I just put the whole tray in my freezer. Once they are frozen they are so easy to then break apart each noodle filling my pot as I go or freezer bags.

I hope you enjoy them and I hope my directions do them justice!

Awe! I hope they get there safe too! Here's to happy hatching Jchny!
I may ask for some if these in the bator don't ever hatch!

I have had 4 total hatch!
Today is day 21 but it's very unnerving that day 19 1 hatched and then yesterday day 20 had 3 more hatch. Besides those..nothing..no internal pips or external for that matter.
I went ahead and pulled the 4 out this morning after checking and triple checking that I had no other pips; had a sponge and heated water on hand to add as I pulled them as to not mess with the humidity too much! Ugh! The first 2 hatched out great...the last two that hatched were sticky..but hatched..they are just hard little ones at this point. Didn't want to chill them by cleaning them up so I'm leaving them be fore now. All are walking and doing fine. Funny though...It's like 2 sets of twins. 2 are blue and 2 are well sticky lol but appear to be yellow/white ish! No NN and no Silkies so I'm bummed about that!

Does anyone in the Indy area know if you still have to get a permit to have chickens? I was told by a neighbor that a few years ago, a friend of his was told she had to get one, and she paid $12 or something and never had any more issues with the city. BUT, I was also told my someone with chickens that they have never had to get a permit... Thoughts? Is it a grandfather clause kinda thing?

So I did just find out that Indy does not require any permits; however, Speedway does. Which is weird since it is a part of Indy. Oh, well. Good news, I don't live in Speedway! :)

Silkies can be tricky to hatch in an incubator I guess. My broodies hatched all of mine. I want to eventually use my incubator, but it scares me to death. It's just a circulated air styrofoam one. I hope Janet doesn't have problems hatching them. She is pretty experienced so I think she shouldn't have too much trouble. My girls are still laying if you decide you want some.
