Instead Of Pumpkin Pie...

    I dont really care for Pumpkin Pie...
    Soo, we're trying this recipe this year instead... Sounds easy to do! [​IMG]
    Hopefully is tastes as goos as it sounds!

    Pumpkin Pie Coffeecake

    2 16oz pkgs. pound cake mix
    4t. Pumpkin Pie spice
    2t. baking soda
    3/4 c. water
    15-oz. can pumpkin
    4 eggs
    3/4 c. brown sugar, packed
    3/4 c. chopped walnuts
    1/2 c. all-purpose flour
    1/3 c. butter

    Combine cake mix, pumpkin pie spice and baking soda. Blend in water, pumpkin and eggs; beat until well mixed.
    Pour half the batter into a greased 13x9 baking pan.
    In a seperate bowl, blend together brown sugar, walnuts and flour; cut in butter until crumbly. Sprinkle half of crumb mixture on top of batter.
    Pour remaining batter into pan and sprinkle remaining crumb mixture on top.
    Bake at 325 degrees for 50 minutes. Serves 6-8.

    I will take your serving(s) of pumpkin pie Red, I really like it - as long as it is not tooooo spicy. I once had one that burned my mouth........tooo spicy.

    Just wanted to update this..
    It was VERY good! Its now a keeper recipe for us...
    My foster sons have been fighting over the leftovers.. [​IMG]
    Had to tell them that i can make it anytime... not just for Thanksgiving..
    Anyways, i'd give it a try! [​IMG]

    Okay, I am going to try this recipe.

    You must understand I have cooked, on or in a stove, exactly three things in the past several years: boiled 30 banty eggs for Thanksgiving Day potluck at work, sauted some Portabello mushrooms this afternoon, and then cooked four slices of special, thick bacon in the same pan as the mushrooms had been sauted.

    Every other bit of cooking I've done has been in my microwave oven, crock pot, or 16 qt. electric roaster.
    I have had a brand new stove/oven in my house since ... I dunno, early August?

    Just inaugurated my stove this past week. Now I'm brave enough to try a simple recipe!!!

    I am not a pumpkn pie lover either.
    And I have probably 4-6 cups of cooked pumpkin left in my freezer from the Rouge Vif d'Etampes I grew last year.
    Now I know where it's going [​IMG]
