You should have kept some of the gizzards and entrails of the birds you processed and put a plate in the coop as bait with the trail cam pointed at it. That way, you'll know exactly where to point the cam and you'll figure out the culprit.

Gizzards and livers are cheap enough ... and would be a worthwhile investment to draw in your mystery dinner guest!
