My ducks hiss at my orange cat (I have over 50 ducks, only one Muscovy, they all can hiss).

She is telling the cat she does not want him around and that they will not be friends any time in her life time.

Yes, they all hiss when in defense and they usually fluff up to make themselves appear bigger. A Muscovy drake will walk around hissing to show he's a man, lol.
