You can scramble some eggs, or open a can of tuna, & offer it to see if that's enticing enough for her to eat on her own.

Feathers are gone too… she was already up to roost just now (much earlier than the rest of the flock) too.

She doesn't look sick. You sure she's not molting? Missing tail feathers maybe a clue.
Molting can be a painful process, sometimes it causes them to act lethargic, & not eat much. Best encourage her to eat high protein during molt.

I separated her last night from the flock to be safe but let her outside this morning and she let out a huge watery poop with a bunch of tiny green tubular poops inside. And usually when I open my front door all the chickens get up and run to me because they think I have treats but she just sat on the rock like this. Is that normal? I’m also not familiar with pin feathers or how to check but I guess I have some research to do! I don’t want to add any unnecessary stress to her by separating her but she’s making me nervous 😬

Molting can make them not want to do much because they're sore.
Just gotta look her over to either confirm, or not if she's truly molting.
