I am all for justice, but these days people are so mean that I'd be afraid to do anything that made them feel like escalating the threat.

In my experience, the kind of people you just described wouldn't hesitate to come over when you weren't home and poison your chickens just to spite you. I don't think anything you say (especially threatening legalities) will motivate them to leave you alone. I just try to think defensively. Your true objective is to be left alone in peace and keep your chickens safe, right? In that case, never poke an angry bear with a short stick.

Doing what works is always harder than reacting to their agression.
Take the high road anyway. You'll sleep better.

However, if the dog chases the chickens, shoot to kill and hide the body.

Keep a copy, without your notes. When the time comes, do what's needed and if they give you any issues, you'll need a copy for when they call the cops. It's not your job to educate them on the law, and they will just be angrier if you do.

I can understand how upset you are with the dog part.

However, I don't know how big your property is, but is 3 feet really worth freaking out over?

My deeds of my backyard encroach on other's, and vice versa...my next door neighbor actually moved his fence over towards him, giving me an extra couple feet like no big deal...is it really going to make that much difference?
