I bought a pilgrim goose and gander today (it is my first time keeping geese). I noticed there seems to be a layer on one side of Mateo's belly. Is this normal?

That's a relief! Thank you!That is a lobe, which is stored fat. Geese can get a single lobe, two lobes, or sometimes a lumpy mix of both. They are completely normal.
With young geese lobes form a little strangly and the appearance and positioning of them won’t necessarily remain the same as they age.
