The a/c is running! It’s cool outside, but I don’t think it was as chilly as they said it was going to be.

I made this the other night and it turned out really well!

No carrots or celery, didn't have any on hand
Used sharp cheddar instead of white
4 cups chicken broth
Approx. 2 tsp italian seasoning
No parsley

That looks good Meg, sort of a new twist on potato soup. I hadn't thought of trying kielbasa in soup before.

Yeah, I hadn't either. I was trying to find something that I had on hand and just happened to buy a kielbasa the other day! Next time I'll get the veggies in there
