Yummy, I'm ready for lots of soups and stews

I made this the other night and it turned out really well!

Changes I made:
No carrots or celery, didn't have any on hand
Used sharp cheddar instead of white
4 cups chicken broth
Approx. 2 tsp italian seasoning
No parsley

Great on a cold day!

I once made a potato, leek and kielbasa soup. I dont remember if I have a recipe, sometimes I read a few different ones and add this and remove that.... but it was delicious.

I’m definitely going to. Bacon is good in it but I like to mix things up and I think hubs will like it.
