In regards to vanilla, we have both. It depends on what we are using it for, some things call for the vanilla bean or to scrap the bean. Other things call for liquid vanilla. Vanilla beans are great to make your own vanilla flavored vodka ;) drop 1 or 2 beans into the bottle and let sit for a few days and then use.
That sounds like it might taste great in a drink. I just made elderberry tincture using vodka, yuck for sure but adding the vanilla might make it taste better. We grow elderberry here, use the flowers for a bouquet tea & have made a preserve with the berries.

had good meal roast beast in beef broth simmering 3 hours till it melts also fries ran out of potato got dark too fast and carrots with nice beef gravy over it all
Yes, beef gravy over any dish, well just about any dish is delish.

I find if I cook a roast with potatoes and carrots or squash in the pan, my gravy doesn't need flour or cornstarch to thicken--the veggies provide it. If I need thickener, I use cornstarch because SIL is gluten free, and doesn't seem to lump up on me
