I just saw this post - when mine are having trouble with the heat, I offer them frozen veggies (spinach in particular they love, as well as broccoli). The ones that come in the boxes. They sort of peck at it as it melts, but it stays cold for quite some time. So long as they have access to shade and water, they should be okay.
ETA: I have never noticed my Jerseys having trouble with the heat, though.
